This is upgrade still spirits Alembic dome and condensor kit with sight glass inserted between the dome and condenser. The sigh glass can be used as a Gin busket with a sieve between, or there’s 3 x copper scrubber can be inserted into the sight glass to play as catylitic converter mesh. The extended height will also improve the separation of different chemicals to purify the spirits.
The large copper surface area of this copper dome also acts as a catalyst with the vapor in the still and help to enhance and concentrate the flavours and aromas during the distilling process. It can also help remove unwanted sulfur compounds which results in a smoother richer, sweeter tasting spirit.
This Alembic Pot Still is made up of solid copper dome and still spirits pot still condenser. Instead of stripping flavours to give clean spirit like the T500, this pot still retains and enhances flavours. This can be used when distilling washes that contain flavours that the user wishes to collect. For example wine for making brandy, malt mashes for making whiskeys or bourbons, molasses mashes for making rum etc.
There’s always question why use copper for alembic still. Here’s the answer:
Copper is the preferred material in the construction of a still to impart flavor into the distilled spirits. According to Broadslab Distillery, both stainless steel and copper are excellent conductors of heat: dispersing the heat evenly across the entire surface of the metal and creating a more even distillation. But where both stainless steel and copper will not put harmful chemicals into your final product, copper has the advantage over stainless in that whisky out of a copper still simply tastes better. When distilling in copper, the copper reacts on a molecular level with the sulfurs put out by the fermenting yeast. It “cancels-out” the sulfur taste which would otherwise be bitter and not as smooth.
In the process of distilling, the sulfur coming from the yeast binds itself to the copper, making hydrogen-sulfide which in turn, forms copper sulfate. The copper sulfate sticks to the inside of the still after distillation is completed. After a thorough cleaning of the copper still, the copper sulfate is washed down the drain, and not into your whisky… unlike other stills made from different metals.
This alembic copper domed top fits onto your Still Spirits T500 Boiler or Pure Distilling Boiler. This can be used in place of the boiler’s stainless steel lid.
